- 600g Desiree potatoes, washed, dried (see note)
- 400g firm white fish fillets (such as ling)
- 1 egg
- 40g (1/4 cup) plain flour
- 30g (1/3 cup) dried (packaged) breadcrumbs
- Tomato sauce, to serve
Method
- Step 1 Preheat oven to 200°C. Spray 2 large baking trays with olive oil spray to lightly grease. Cut the potatoes in half lengthways, then cut each half into 4 wedges. Arrange the potato wedges on 1 prepared tray. Spray lightly with olive oil spray. Bake in oven for 40 minutes or until golden.
- Step 2 Meanwhile, cut the fish into 8 long pieces. Crack the egg into a shallow bowl and use a fork to lightly whisk. Place the flour and breadcrumbs in separate shallow bowls.
- Step 3 Dip 1 piece of fish in the flour. Shake off any excess. Dip the fish in the egg, then in the breadcrumbs, pressing firmly to coat. Place on the remaining prepared tray. Repeat with the remaining fish, flour, egg and breadcrumbs.
- Step 4 Spray the fish with olive oil spray. Bake in oven for 20 minutes or until golden. Serve the fish and potato wedges with tomato sauce.
