  • 3 cups (360g) frozen peas
  • 350g thickly sliced ham, chopped
  • 1/3 cup (80ml) thickened cream

  • Step 1 Heat half the oil in a saucepan over medium heat. Add onion and leek. Cook, stirring, for 5 mins or until onion softens.
  • Step 2 Add the potato, stock and 2 cups (500ml) water. Bring to the boil. Reduce heat to low and simmer for 10 mins or until the potato is tender. Stir in the peas. Cook for 5 mins or until the peas are tender.
  • Step 3 Meanwhile, heat remaining oil in a frying pan over medium-high heat. Cook ham, stirring, for 5 mins or until golden. Transfer to a plate lined with paper towel.
