  • 250g sebago potatoes, peeled, coarsely chopped
  • 1L Massel chicken style liquid stock
  • 1/2 cup thickened cream, plus extra for serving
  • 1.2 kg ham hock
  • 1 1/2 cups dried split peas, rinsed
  • 2L water
  • 2 cups frozen peas
  • Baby red garnet leaves, to serve

Method

  • Step 1 Heat butter and olive oil in a large saucepan over medium-high heat.
  • Step 2 Place leek, potato, ham hock, dried split peas and water in saucepan with the chicken stock. Simmer, partially covered, for 1 3/4 hours. Remove ham hock. Add 2 cups frozen peas to the soup and simmer for 10 minutes. Puree.
  • Step 3 Meanwhile, remove the meat from the hock and coarsely chop. Return to pan with the thickened cream. Season with white pepper. Swirl through extra cream, if you like. Sprinkle with baby red garnet leaves.
