- Step 1 Place medium sized saucepan over medium heat. Add cream, milk, sugar and vanilla paste then stir until sugar dissolves. Bring to boiling point and then immediately remove from heat.
- Step 2 Prepare an ice bath, combing 1 cup of ice and 1 cup of water, in a large metal bowl.
- Step 3 Place egg yolks in a medium bowl and whisk for about 1 minute until yolks are slightly pale in colour. Whisk in 1/2 cup of hot cream mixture. Add remaining cream mixture, whisking constantly.
