- 6 medium (800g) buerre bosc pears, peeled, cored, each cut into 8 wedges
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/4 cup firmly packed brown sugar

- 50g butter, chilled, chopped
- 1/4 cup firmly packed brown sugar
- 1/3 cup plain flour
- 50g dark chocolate, chopped
- 1/4 cup dry roasted hazelnuts, chopped
Method
- Step 1 Preheat oven 180C/160C fan forced. Combine pears, lemon juice, cinnamon and sugar in a saucepan over medium-low heat. Stir until sugar has dissolved. Cook, covered, for 10 to 12 minutes or until pears are just tender. Divide between four 1 cup-capacity ovenproof dishes.
- Step 2 Make topping: Place ingredients in a bowl. Using your fingertips, rub together until mixture resembles coarse breadcrumbs. Sprinkle over pear mixture. Bake for 20 to 25 minutes. Set aside to cool for 5 minutes. Serve crumbles with cream, custard or ice-cream.
