Ingredients
- 410g can pear halves, drained, chopped
- 100g butter, at room temperature
- 1/2 cup caster sugar
- 100g dark chocolate, melted
- 1/2 cup plain flour
- 1/2 teaspoon baking powder
- 3/4 cup hazelnut meal
- 1/2 cup fresh white breadcrumbs
- 1/2 cup cream, whipped
- 4 eggs
- Warm custard, to serve
Method
- Step 1 Preheat oven to 180°C or 160°C fan. Grease 10 x 1/2 cup moulds. Divide chopped pears evenly between the base of each mould.
- Step 2 Using an electric mixer, beat butter and sugar together in a large bowl until pale and creamy. Add eggs, one at a time, beating well after each addition. Add chocolate, beating constantly, until smooth and well combined.
- Step 3 Sift together flour and baking powder. Add to chocolate mixture with hazelnut meal and breadcrumbs. Mix to combine. Gently fold through whipped cream.
- Step 4 Remove puddings from pan. Rest in moulds for 5 mins before inverting onto serving plates. Serve drizzled with custard.
- Step 5 Fill prepared moulds, taking care not to disturb pear. Place puddings in a large baking pan. Pour in enough boiling water to come halfway up sides of pan. Cover tightly with baking paper and foil. Bake for 35-40 mins until cooked when tested with a skewer.
