  • 2 brown onions, finely chopped
  • 420g (6 cups) fresh breadcrumbs (made from day-old bread)
  • 140g (1 cup) pistachio kernels, finely chopped
  • 140g (2/3 cup) whole dried apricots, finely chopped
  • 300g feta, crumbled
  • 1 cup fresh continental parsley leaves, chopped
  • 6 eggs, lightly whisked
  • 2 tablespoons olive oil

Method

  • Step 1 Preheat oven to 200ºC. Line 2 baking trays with non-stick baking paper.
  • Step 2 Melt the butter in a large frying pan over medium-low heat. Cook the onion, stirring often, for 3-4 minutes or until soft but not coloured.
  • Step 3 Place the onion mixture, breadcrumbs, pistachio, apricot, feta and parsley in a large bowl. Stir to combine. Season with salt and pepper. Add the egg and stir until well combined.
  • Step 4 Roll 2 tablespoonfuls of the mixture into balls. Place on the prepared trays. Brush with oil. Bake for 18-20 minutes or until light golden.
