Ingredients
- 1 tablespoon vegetable oil
- 1/2 cup popping corn
- 1 cup caster sugar
- Food colourings (Red, blue and yellow )
Method
- Step 1 Line 3 large baking trays with baking paper. Heat oil in a large saucepan over medium heat. Add 2 pieces of corn. Oil is hot enough when corn turns slowly in a circle. Add remaining corn. Cover with a tight-fitting lid. Shake saucepan gently when corn starts popping. Remove from heat when corn stops popping. Transfer to a large heatproof bowl. Discard any un-popped corn.
- Step 2 Place 1/3 cup sugar and 1/4 cup cold water in a medium saucepan over medium heat. Cook, stirring, for 8 minutes or until sugar has dissolved. Bring to the boil. Boil, without stirring, for 5 minutes or until thick and syrupy. Add 3 to 4 drops of red food colouring. Add one-third of the popcorn to pan. Reduce heat to low. Cook, stirring, for 30 seconds to 1 minute or until popcorn is coated in sugar and crystalised. Spread popcorn onto 1 prepared tray. Stir to separate. Set aside to cool completely.
- Step 3 Repeat process with remaining popcorn, sugar, cold water and blue and yellow food colourings.
- Step 4 Place popcorn in a large bowl. Stir until well combined. Serve.
