- 750g pork fillet
- 4 cloves garlic, roughly chopped

- 1 lemon, juiced
- 3 red onions, peeled, cut into wedges
- 4 potatoes, peeled, chopped

- Step 1 Preheat oven to 180C or 160C fan-forced. Toss together pears and lemon juice and set aside.
- Step 2 Heat oil in a large, flame-proof baking pan on high. Brown pork for 2-4 mins each side. Remove pork fillet from pan.
- Step 3 Reheat pan on medium, add onion and cook for 3-4 mins until brown. Add garlic and thyme and cook for 1 min. Add stock and bring to the boil. Season to taste with salt and pepper. Add pears and potatoes to the pan. Bake for 40 mins until potato is tender.
- Step 4 Return pork to pan and bake for another 20 mins until cooked. Slice pork. Serve with potatoes, pears and onions and drizzle with juices.
