- 8 slices mild pancetta
- 1 (about 415g) pork fillet, halved lengthways
- 2 tablespoons olive oil
- Salt & freshly ground black pepper
- 12 fresh sage leaves

- Step 1 Place half the pancetta slices, overlapping slightly, on a clean surface. Place a piece of pork on pancetta and brush with 2 teaspoons of oil. Season with salt and pepper and top with half the sage leaves. Fold pancetta over to enclose pork. Wrap in plastic wrap. Repeat with remaining pancetta, pork, 2 teaspoons of oil, salt and pepper, and sage. Place in the fridge for 1 hour to develop the flavours.
