- 60ml (1/4 cup) water
- 2 tablespoons soy sauce
- 2 tablespoons dry sherry
- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon caster sugar
- 350g pkt chow mein noodles
- 1 tablespoon peanut oil
- 1 teaspoon sesame oil
- 18 cooked prawns, peeled leaving tails intact, deveined
- 1 red capsicum, seeded, thinly sliced
- 1 cucumber, halved lengthways, sliced diagonally
- 160g pkt snow pea sprouts, trimmed
Method
- Step 1 Whisk the peanut butter, water, soy sauce, sherry, vinegar and sugar in a bowl until well combined.
- Step 2 Cook the noodles in a large saucepan of boiling water for 3 minutes or until tender. Drain. Rinse under cold water. Return to pan. Add combined oil and toss to coat. Add the prawns, capsicum, cucumber and two-thirds of the snow pea sprouts. Toss to combine.
- Step 3 Transfer to a platter. Top with the remaining sprouts and serve with the peanut dressing.
