Ingredients
- 110g packet slivered almonds
- 2/3 cup Coles shredded coconut
- 250g Coles pink and white marshmallows
- 180g packet raspberry lollies
- 115g tub Kraft mini oreo bite size cookies
- 500g Coles finest Belgian dark chocolate, roughly chopped
Method
- Step 1 Preheat oven to 180C or 160C fan. Lightly grease a 28cm x 18cm (base measurement) slice pan and line with non-stick baking paper. Spread almonds on a baking tray and bake for 3 mins, or until lightly golden. Transfer to a plate to cool.
- Step 2 Meanwhile, place coconut in a dry frying pan and stir over medium heat for 1-2 mins, or until lightly golden. Transfer to a plate to cool.
- Step 3 Combine almonds, coconut, marshmallows, lollies and cookies in a large bowl.
- Step 4 Place chocolate in a heatproof bowl over a saucepan of simmering water (make sure the base of the bowl doesn’t touch the water). Stir until chocolate has melted. Remove bowl from the pan.
- Step 5 Pour melted chocolate over the marshmallow mixture. Using a rubber spatula, mix until evenly combined. Scrape marshmallow mixture into the prepared pan and spread out evenly. Place in the fridge for 20 mins to set.
- Step 6 Lift rocky road out of the pan and cut into 24 squares.
