- 2 teaspoons sea salt
- 2 teaspoons cracked black pepper
- Olive oil spray
- 200g rice noodles
- 1 Lebanese cucumber, seeded, cut into matchsticks
- 1 carrot, cut into matchsticks
- 1 red capsicum, cut into thin strips
- 1 cup coriander leaves
- 1/2 cup (125ml) South East Asian salad dressing
- Coriander leaves, extra, to serve
- Lime wedges, to serve

- Step 1 Preheat oven to 200C. Line a large baking tray with baking paper.
