- 6 eggs
- 180g butter, softened

- 250g packet granita biscuits
- 18 vanilla marshmallows
- 1 rainbow-flavoured sour strap
- 1 Stix chocolate-coated biscuit
- Chocolate sea shells, to decorate
- Gummy jelly fish, to decorate
- Starfish lollies, to decorate
- Candied rocks, to decorate
Frosting
- 500g butter, softened
- 3 3/4 cups icing sugar mixture
- 1 1/2 tablespoons milk
Method
- Step 1 Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 20cm (base) round cake pan and a 6cm-deep, 15cm (base) round cake pan. Line with baking paper, extending paper 3cm from edge of pans.
- Step 2 Prepare cakes following packet directions. Spread batter into 15cm pan until 3/4 full. Spread remaining batter into 20cm pan. Bake 15cm pan for 1 hour or until a skewer inserted comes out clean. Bake 20cm pan for 1 hour 20 minutes or until a skewer inserted comes out clean. Stand cakes in pans for 15 minutes. Turn out onto wire racks to cool.
- Step 3 Meanwhile, make frosting Using an electric mixer, beat butter in a bowl until pale. Gradually add icing sugar mixture and milk, beating constantly until combined.
- Step 4 Using a serrated knife, level tops of cakes. Cut each cake in half. Place one half of the 20cm cake on board. Spread with 1/3 cup jam. Top with 3/4 cup frosting, then remaining cake half.
- Step 5 Spread one cut-side of one half of the 15cm cake with 1/4 cup frosting. Place, frosting-side down, on 20cm cake. Spread top with remaining jam. Top with 1/2 cup frosting, then remaining cake half.
- Step 6 Process biscuits until they resemble fine breadcrumbs. Place 1/2 cup biscuit crumbs in a shallow dish. Reserve remaining crumbs. Cover marshmallows in frosting. Toss in biscuit crumbs.
- Step 7 Spread top and sides of cake with remaining frosting. Coat cake with remaining biscuit crumbs and sprinkle over serving board. Using the picture as a guide, position marshmallows on cake.
