  • 1/3 cup packed mint leaves, torn
  • 40g (1/2 cup) shaved parmesan

  • Step 1 Heat oil in a large, deep frying pan over medium–high heat. Cook onion, garlic and chilli, stirring frequently, for 3 minutes or until softened.
  • Step 2 Cut ends off sausages and squeeze out meat from casings into pan, breaking up using the back of a spoon. Add wine and cook for 2 minutes or until wine has almost evaporated. Add stock and simmer for 5 minutes or until sauce has thickened slightly.
