- 500g Coles Finest Angus beef garlic and parsley sausages
- 400g green beans
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 2 x 400g cans lentils, drained and rinsed
- 80g baby spinach leaves
- 120g goat's cheese, coarsely crumbled
- Crusty bread, to serve
Method
- Step 1 Heat a large non-stick frying pan over medium-low heat. Cook the sausages, turning occasionally, for 12 minutes or until golden and cooked through. Thickly slice.
- Step 2 Meanwhile, cook the beans in a steamer set over a saucepan of simmering water for 2 minutes or until bright green and tender crisp. Run briefly under cold water to cool.
- Step 3 Mix the vinegar and oil until well combined. Place the warm sausage, beans, lentils and baby spinach in a large bowl. Season with salt and pepper. Add half the dressing and toss to combine.
