Ingredients
- 50g butter
- 1 brown onion, halved, thinly sliced
- 200g bacon rashers, rind and excess fat removed, roughly chopped
- 6 (about 1.5kg) leeks, halved lengthways, washed, dried, cut into 5cm lengths
- Salt & freshly ground black pepper
Method
- Step 1 Melt the butter in a large, deep frying pan over medium heat until foaming. Add onion and cook, stirring, for 2 minutes or until onion softens. Add bacon and cook, stirring, for 5 minutes or until bacon starts to brown. Add the leek and cook, turning occasionally, for 2 minutes or until brown.
- Step 2 Reduce heat to low. Cut a piece of non-stick baking paper large enough to fit over the top of the frying pan. Gently crumple and wet with cold water. Place over the leek mixture to cover. Cook for 35-40 minutes or until leek is soft. Remove from heat. Season with salt and pepper. Serve with beef wellingtons.
