- 1 brown onion, finely chopped
- 1 red capsicum, seeded, finely chopped
- 300g pkt Quorn Mince
- 2 garlic cloves, crushed
- 40g pkt burrito spice mix
- 400g can diced tomatoes
- 100g can black beans, rinsed, drained
- 250g pkt microwavable basmati rice
- 8 large silverbeet leaves, trimmed
- 1 avocado, stoned, peeled, mashed
Method
- Step 1 Heat oil in a large non-stick frying pan over medium-high heat. Add the onion and capsicum and cook, stirring, for 2-3 mins or until the onion softens. Add the mince, garlic and spice mix and cook, stirring, for 1 min or until well combined. Add the tomato, beans and 1 cup (250ml) water. Reduce heat to medium-low. Cook for 5 mins or until the mixture thickens. Season. Add the rice and stir to combine.
- Step 2 Cook the silverbeet in a large saucepan of boiling water for 30 secs. Drain. Pat dry with paper towel.
- Step 3 Place the silverbeet on a clean work surface. Divide mince mixture evenly among leaves. Fold over the long edges and roll up to enclose the filling. Serve with the avocado.
