- 350g spaghetti
- 200g sugar snap peas, trimmed
- 200g snow peas, trimmed, thinly sliced lengthways
- 75g (1/4 cup) light sour cream
- 1 teaspoon finely grated lemon rind
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh continental parsley
- 1 bunch rocket, ends trimmed, chopped
- 150g smoked salmon, thinly sliced
Method
- Step 1 Cook the spaghetti in a large saucepan of salted boiling water following packet directions. Add the sugar snap peas and snow peas in the last 1 minute of cooking. Drain and return to pan.
