Ingredients
- 225g (1 1/2 cups) plain flour, plus extra, to dust
- 225g (1 1/2 cups) plain wholemeal flour
- 90g (1 cup) rolled oats
- 1 teaspoon bicarbonate of soda
- 1 teaspoon sea salt flakes
- 40g butter, chilled, chopped
- 435ml (1 3/4 cups) buttermilk
Method
- Step 1 Preheat oven to 200C/180C fan forced. Dust a baking tray with a little extra flour.
- Step 2 Combine plain and wholemeal flour, oats, bicarb and salt in a bowl. Add butter. Use fingertips to rub butter into flour mixture until it resembles fine crumbs. Make a well in centre. Add buttermilk. Use a flat-bladed knife to stir until a soft dough forms. Turn onto a lightly floured surface. Use floured hands to shape dough into a ball. Place on prepared tray. Flatten to form a 20cm round. Dust top with a little extra flour. Cut a deep cross into top of dough round.
- Step 3 Bake for 35 minutes or until bottom sounds hollow when tapped. Transfer to a wire rack to cool. Serve warm or at room temperature.
