  • 1/2 teaspoon caster sugar
  • 250ml (1 cup) warm water
  • 300g (2 cups) plain flour
  • 90g (1/2 cup) semolina
  • 1 teaspoon salt
  • 2 tablespoons extra virgin olive oil

  • Step 1 To make the dough, combine the yeast, sugar and 60ml (1/4 cup) of the water in a bowl. Set aside for 5 minutes or until frothy. Combine the flour, semolina and salt in a bowl. Make a well in the centre. Add the yeast mixture, oil and remaining water. Use a round-bladed knife in a cutting motion to mix unti combined. Use your hands to bring dough together.
