Ingredients
- 250g cooked spaghetti
- 2 eggs
- 25g (1/3 cup) finely grated parmesan cheese
- 250ml (1 cup) tomato pasta sauce
- 2 (about 80g) bocconcini or mozzarella, sliced
- 3 button mushrooms, sliced
- 3 slices pancetta
- 1/2 cup fresh basil
Method
- Step 1 Preheat oven to 200C/180C fan forced. Grease a 30cm pizza tray.
- Step 2 Place spaghetti in a large bowl. Lightly whisk eggs and add to the spaghetti along with the parmesan. Season. Use tongs to toss until combined.
- Step 3 Spread spaghetti mixture evenly over prepared tray. Bake for 5 minutes or until partially cooked. Spread with pasta sauce and top with bocconcini, mushroom and pancetta. Bake for 15 minutes or until base is crisp and cheese is melted. Season and sprinkle with basil.
