- 1 1/2 cups frozen peas
- 1/2 cup finely grated parmesan, plus extra to serve
- 425g can tuna in oil, drained, flaked
- 1/3 cup chopped fresh basil, plus extra leaves to serve
- Sliced red chilli (optional), to serve

- Step 1 Heat oil in a large, heavy-based saucepan over medium-high heat. Add onion. Cook, stirring, for 3 minutes or until starting to soften. Add garlic. Cook for 30 seconds or until fragrant.
- Step 2 Add rice. Stir to coat. Add tomato paste. Stir to combine. Add stock and boiling water. Season with salt and pepper. Bring to a simmer. Reduce heat to low. Cook, stirring occasionally, for 15 minutes or until rice is just tender and liquid is absorbed.
- Step 3 Add peas and parmesan to risotto. Cook for 2 minutes or until peas are tender. Remove from heat. Stir in tuna and basil. Serve risotto topped with extra parmesan, basil leaves and chilli, if using.
