- 1 tablespoon ground turmeric
- 2 teaspoons ground cumin
- 1 teaspoon mustard powder
- 2 tomatoes, coarsely chopped
- 150g palm sugar or brown sugar
- 125ml white vinegar
- 1kg just-ripe bananas, chopped
- 100g (1 cup) fresh coconut or desiccated coconut, grated
- 1 teaspoon salt
- 1 bunch fresh coriander, chopped
Method
- Step 1 Heat the oil in a large saucepan over low heat. Add the onion, garlic, ginger, chilli and lime rind and cook, stirring, for 10 minutes or until soft and aromatic.
- Step 2 Add the turmeric, cumin, mustard and tomato. Cook, stirring occasionally, for 10 minutes. Add the sugar and stir until dissolved. Add the vinegar, banana and coconut. Simmer, stirring occasionally, for 30 minutes or until thickened.
- Step 3 Stir in the lime juice, salt and coriander. Divide among sterilised jars. Seal.
