- 50g butter
- 2 brown onions, halved, thinly sliced
- 1 tablespoon brown sugar
- 2 cardamom pods, bruised
- 2 teaspoons mustard seeds
- 1 cinnamon stick
- 1 teaspoon cumin seeds
- 2 dried bay leaves
- 1/4 teaspoon dried chilli flakes
- 2 garlic cloves, crushed
- Pinch saffron threads
- 1 1/2 cups Basmati rice
- 2 cups Massel chicken style liquid stock
- 1/3 cup roughly chopped pistachio kernels
Method
- Step 1 Melt butter in a large saucepan over medium heat.
- Step 2 Add onion. Cook, stirring for 10 minutes or until onion is softened. Add sugar. Cook, stirring for 2 minutes.
- Step 3 Add cardamom, mustard seeds, cinnamon stick, cumin seeds, bay leaves, chilli flakes, garlic and saffron.
- Step 4 Cook, stirring for 2 to 3 minutes or until fragrant.
- Step 5 Increase heat to high.
- Step 6 Add rice. Stir to coat in spice mixture. Cook for 1 minute. Add stock and 1/2 cup cold water. Stir to combine. Cover. Bring to the boil. Reduce heat to low. Simmer for 10 to 12 minutes or until liquid is absorbed. Remove from heat. Set aside for 2 minutes. Discard cardamom pods and bay leaves. Season with salt and pepper. Stir in pistachios. Serve.
