Ingredients
- 1 1/3 cups flat-leaf parsley leaves
- 1 cup coriander leaves
- 500g Coles Australian Pork Mince
- 1/2 cup (35g) fresh breadcrumbs (made from day-old bread)
- 1 Coles Brand Australian Free Range Egg
- 2 teaspoons sweet paprika
- 2 teaspoons Middle Eastern Harissa spice mix
- 3 garlic cloves, crushed
- 2/3 cup (180g) tahini
- 2 tablespoons lemon juice
- 2 ripe tomatoes, finely chopped
- 1/2 red onion, thinly sliced
- 2 teaspoons olive oil
- Mountain Bread flatbread, to serve
- Lemon wedges, to serve
Method
- Step 1 Coarsely chop 1/3 cup each of the parsley and coriander. Place in a large bowl. Add mince, breadcrumbs, egg, paprika, spice mix and two-thirds of the garlic. Season. Mix until well combined. Roll tablespoonfuls of mince mixture into balls. Transfer to a tray lined with baking paper. Flatten slightly. Cover and place in the fridge for 10 mins to chill.
- Step 2 Meanwhile, combine tahini, lemon juice, remaining garlic and 1/2 cup (125ml) warm water in a bowl. Combine the tomato, onion, remaining parsley and remaining coriander in a large bowl.
