- 240g pkt wholegrain tortillas
- 25g (1/3 cup) finely grated parmesan
- 250g punnet cherry tomatoes, quartered
- 1/2 red onion, finely chopped
- 2 tablespoons chopped fresh coriander
- 1 tablespoon fresh lime juice
Method
- Step 1 Preheat oven to 180°C. Place 3 tortillas on a clean work surface. Use a 7cm star-shaped pastry cutter to cut stars from the tortillas. Place the stars on 1 large baking tray. Repeat with the remaining tortillas and place the stars on another large baking tray. Divide the parmesan evenly among the stars. Bake for 4-5 minutes or until crisp. Set aside to cool.
