- 1kg green prawns, peeled, tails intact

- Step 1 Place rice in a bowl. Cover with cold water. Stand for 30 minutes. Drain. Place rice in a saucepan. Pour over 2 1/2 cups cold water to cover rice. Bring to the boil over medium-high heat. Reduce heat to low. Simmer, uncovered, for 15 minutes. Remove from heat. Stand, covered, for 5 minutes or until rice has absorbed liquid.
- Step 2 Meanwhile, combine sugar, salt and 1 tablespoon mirin in a heatproof, microwave-safe jug. Microwave on HIGH (100%) for 40 seconds or until sugar dissolves. Cool. Spread rice over a baking tray. Drizzle over mirin mixture. Stir to coat.
