- 375g firm tofu, drained
- 3 teaspoons olive oil
- 1 large onion, thinly sliced
- 420g loaf Turkish bread, cut into 4 pieces, halved horizontally
- 1 small avocado, halved, stone removed
- 2 Lebanese cucumber, peeled into ribbons
Method
- Step 1 Combine the sweet chilli, soy sauce and ginger in a shallow rectangular dish. Cut the tofu in half crossways then in half horizontally to make 4 pieces. Turn over in the marinade. Cover. Set aside in the fridge for 1 hour.
- Step 2 Meanwhile, heat 1 teaspoon oil in a large frying pan over a medium-high heat. Add the onion. Cover and cook for 8 minutes, stirring occasionally. Remove. Set aside.
