  • 2 tablespoons plain flour
  • 4 chicken marylands
  • 1 tablespoon olive oil
  • 1 red onion, halved, cut into thick wedges

  • 185ml (3/4 cup) Massel chicken style liquid stock
  • 185ml (3/4 cup) white wine
  • 8 sprigs fresh thyme
  • 1 lemon, thickly sliced
  • 85g (1/2 cup) green olives
  • Fresh thyme leaves, to serve
  • Mashed potato, to serve

Method

  • Step 1 Preheat oven to 180°C. Place the flour on a large plate and season with salt and pepper. Place the chicken in the flour and turn to coat. Shake off any excess flour.
  • Step 2 Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 3-4 minutes each side or until golden. Transfer to a 3L (12-cup) capacity ovenproof dish.
