- 12 lychees, peeled
- 4 scoops tropical fruit sorbet (Weis brand)

- Step 1 Combine caster sugar and water in a medium heavy-based saucepan and stir over low heat until the sugar dissolves. Increase heat to medium and bring to the boil. Boil, occasionally brushing down the sides of the pan with a pastry brush dipped in water, for 15 minutes or until golden. Remove from heat and set aside for 5 minutes or until bubbles subside. Gradually stir in the coconut cream until combined. Set aside for 10 minutes to cool slightly.
