- 100g packet wild rice
- 200g snow peas, trimmed, thinly sliced

- 4 (about 125g each) turkey breast steaks
- 2 tablespoons lemon juice
- 3 teaspoons extra virgin olive oil
- 1/2 teaspoon honey
- 1 small bunch watercress, washed, leaves picked
- 2 tablespoons chopped fresh chives
- 70g dried blueberries
- Lemon zest, to serve
Method
- Step 1 Cook wild rice in a large saucepan of boiling water following packet directions. Drain well. Set aside to cool.
- Step 2 Meanwhile, cook snow peas and asparagus in a saucepan of boiling water for 2 minutes or until tender crisp. Refresh under cold running water. Drain well.
- Step 3 Use a rolling pin or meat mallet to pound the turkey breasts slightly. Spray a large non-stick frying pan with olive oil and heat over medium-high heat. Cook turkey for 3-4 minutes each side or until golden and cooked through. Slice.
- Step 4 Whisk together the lemon juice, oil and honey in a small bowl. Set aside. Place the cooked rice, snow peas, asparagus, watercress, chives and blueberries in a large bowl. Toss gently to combine.
