- Vegetable oil, for deep frying
- 1 beetroot, unpeeled, scrubbed, thinly sliced (see Notes)
- 1 large potato, peeled, thinly sliced
- 1 carrot, peeled, thinly sliced diagonally
- 1 orange sweet potato, unpeeled, thinly sliced
- 1 parsnip, peeled, thinly sliced
Horseradish dip
- 200g tub creme fraiche (see Notes)
- 1 1/2 tablespoons horseradish cream
- 1 tablespoon lemon juice
- 1 tablespoon fresh chives, finely chopped
Method
- Step 1 Make Horseradish dip; Combine all ingredients in a small bowl. Season with salt. Cover. Refrigerate until required.
- Step 2 Pour enough oil into a large saucepan to reach 3cm up side of pan. Heat over medium-high heat until temperature reaches 180C (see Notes). Place a wire rack over a baking tray lined with paper towel.
- Step 3 Pat dry beetroot, potato, carrot, sweet potato and parsnip slices with paper towel. Deep-fry, in batches, for 1 to 2 minutes or until golden and crisp. Using a slotted spoon, transfer chips to wire rack to drain and cool. Season with salt. Serve with dip.
