- 3 small sweet potatoes (kumara)
- 2 tablespoons olive oil
- 2 onions, halved, thinly sliced
Herb & chilli butter
- 1 small red chilli, seeds removed, finely chopped
- 1 tablespoon finely chopped flat-leaf parsley
- 1 garlic clove, crushed
- 125g unsalted butter, softened

- Step 1 Preheat oven to 200°C. For herb & chilli butter, mix ingredients, then form into a log shape, wrap in plastic wrap and chill.
- Step 2 Wrap each potato in foil and bake for 30 minutes, then open foil and bake for a further 10 minutes until cooked through.
- Step 3 Meanwhile, heat oil in a frypan over medium-high heat, add onions and cook, stirring occasionally, for 20 minutes or until crisp and golden.
