- 1kg pkt Coles Australian Baby Red Royale Potatoes*
- 40g butter
- 2 tablespoons plain flour
- 1 cup (250ml) milk
- 1 cup (120g) coarsely grated vintage cheddar
- 2 teaspoons Dijon mustard
- 1/2 teaspoon smoked paprika
- 2 tablespoons finely chopped chives
Method
- Step 1 Preheat oven to 200°C. Line a baking tray with baking paper. Place potatoes on the lined tray. Spray with olive oil spray. Season. Roast, turning occasionally, for 30 mins or until tender.
- Step 2 Meanwhile, melt the butter in a saucepan over medium heat. Add flour. Cook, stirring, for 1 min or until the mixture is grainy. Remove from heat. Add the milk and use a balloon whisk to whisk until well combined. Return to the heat. Cook, stirring, for 5 mins or until the sauce boils and thickens. Remove from heat. Add half the cheddar and stir to combine. Add mustard, paprika and chives. Stir to combine. Season.
- Step 3 Use a small sharp knife to cut a small cross in the top of each potato. Cover with a clean tea towel and press down gently on each potato to open slightly. Spoon the sauce into the cuts. Sprinkle with remaining cheddar. Bake for 5-10 mins or until golden brown.
