- 2 teaspoons olive oil
- 1 brown onion, finely chopped
- 2 sticks celery, sliced
- 1 carrot, peeled and sliced
- 2 garlic cloves, crushed
- 400g can diced tomatoes
- 1 cup Campbell's Real Stock Chicken
- 1 1/2 cups self-raising flour
- 40g butter, chopped
- 2 teaspoons chopped thyme
- 1/2 cup parmesan, finely grated
- 1/2 cup milk
Method
- Step 1 Preheat oven to 180C (or 160C fan-forced). Using your hands, bend chicken marylands firmly backwards at the joint to break. Cut through joint to separate thigh from drumstick. Trim off excess fat. Heat oil in a large frying pan and cook chicken pieces in batches over medium-high heat for about 5 mins, until golden brown.
