- 500g chicken tenderloins, tendons removed

- 150g mixed salad leaves

- 1/2 small lemon, juiced
- 1 garlic clove, crushed
- 1 tablespoon finely chopped chives
- 1 tablespoon flat-leaf parsley leaves, chopped

- Step 1 Preheat oven and a baking tray to 200°C. Place bread in a food processor. Process to crumbs. Add parmesan. Process to combine. Transfer to a plate. Place egg and milk in a shallow bowl. Season with salt and pepper and whisk to combine.
