- 4.2kg ham, on the bone
- 1 cup lime marmalade
- 1/2 cup brown sugar
- 2 limes, rind shredded, juiced (1/4 cup)
- 75g pistachio kernels, roughly chopped
Method
- Step 1 Preheat oven to 150°C. Place oven shelf in lowest position. Line a large roasting pan with 2 sheets of baking paper. Using a small, sharp knife, cut through rind, 10cm from shank end. Remove rind from ham. Score the fat 5mm deep in a diamond pattern. Place ham in prepared roasting pan.
- Step 2 Combine marmalade, brown sugar, lime rind, lime juice and pistachios in a bowl. Spoon half of the crust mixture over the ham. Bake, spooning over remaining crust mixture every 20-30 minutes, for 1 hour 30 minutes or until golden brown. Serve ham warm or cold.
