Ingredients
- 1/2 cup maple syrup
- 1/2 cup tomato sauce
- 1/4 cup balsamic vinegar
- 2 teaspoons dijon mustard
- 1kg mixed chicken pieces, such as thigh cutlets, drumsticks and wings
- 2 medium brown onions, cut into wedges
- 400g sweet potato, peeled, cut into 3cm pieces
- Chopped fresh flat-leaf parsley leaves, to serve

- Step 1 Combine maple syrup, tomato sauce, vinegar and mustard in a large glass or ceramic bowl. Add chicken. Toss to coat. Cover. Refrigerate for 2 hours.
