- 1 tablespoon vegetable oil
- 1.2kg beef blade roast
- 1 brown onion, diced
- 1 sprig fresh curry leaves, leaves picked
- 5cm piece fresh ginger, grated
- 1/3 cup rogan josh curry paste
- 400g can crushed tomatoes
- 1 1/2 cups Massel beef stock
- 1 small eggplant, chopped
- 400g sweet potato, peeled, chopped
- 200g grape tomatoes, halved
- Fried curry leaves (optional, see note)
- 1/2 cup plain Greek-style yoghurt
- 6 warmed roti (optional), to serve
Method
- Step 1 Heat vegetable oil in a large heavy-based flameproof casserole dish over medium-high heat. Add beef. Cook for 5 minutes each side or until browned. Transfer to a plate.
- Step 2 Reduce heat to medium. Add onion and curry leaves. Cook, stirring, for 5 minutes or until onion softens. Add ginger and curry paste. Cook, stirring, for 1 minute or until fragrant. Add crushed tomatoes, stock and 1 cup water. Bring to a simmer.
- Step 3 Return beef to the dish. Cover. Reduce heat to low. Simmer for 2 hours, turning beef halfway through cooking, or until almost tender.
- Step 4 Add eggplant and potato. Simmer for 25 minutes or until beef and vegetables are tender. Season with salt and pepper.
- Step 5 Remove beef from dish. Using 2 forks, roughly shred. Return to dish with grape tomato. Top with fried curry leaves, if using. Serve with yoghurt and roti, if using.
