Ingredients

  • 340g pkt vanilla butter cake
  • 2 tablespoons bought vanilla frosting
  • Icing sugar mixture, to dust
  • 250g white chocolate melts
  • White icing flowers, to decorate
  • White sprinkles, to decorate
  • Sanding sugar, to decorate

Method

  • Step 1 Preheat the oven to 180C. Grease and line the base of a 20cm round (base measurement) cake pan with baking paper.
  • Step 2 Make the vanilla butter cake following packet directions. Spoon into the prepared pan and bake for 40-45 minutes or until a skewer inserted in the centre comes out clean. Remove from oven and set aside for 10 minutes before turning onto a wire rack to cool completely.
  • Step 3 Use a serrated knife to trim the crusts of the cake. Break the cake into small pieces and transfer to the bowl of a food processor. Process until fine crumbs form. Transfer to a bowl. Add the vanilla frosting and stir to combine.
  • Step 4 Line an oven tray with baking paper. Dust a clean work surface with icing sugar mixture. Shape two-thirds of the mixture into a 2cm-thick disc. Use a 3.5-cm fluted pastry cutter to cut discs from the cake mixture and place on the lined tray, rerolling any excess cake mixture.
  • Step 5 Shape the remaining cake mixture onto a clean work surface to a 1.5cm-thick disc. Use a 1.5-cm fluted cutter to cut discs and place on the lined tray. Loosely cover with plastic wrap and place in the fridge for 1 hour or until firm.

Sprinkle with sanding sugar, white sprinkles or top with an icing flower while chocolate is still melted. Repeat with remaining cake pops, chocolate, sanding sugar, sprinkles and flowers. Set aside for 30 minutes or until chocolate is completely set.
